Eric's Improved Version of Debbie's Chili


Best 2 Meat 3 Bean Chili maybe ever

Use a very big pot, I fill a 15 1/2 qt Le Creuset

2 lbs. ground beef
4 large chicken breasts
8 cans diced tomatoes
3 beer plus additional for drinking
2 large onions
6 lg cloves garlic chopped fine
8 small cans Hatch green peppers
2/3 cup of chili powder in 2 dumps
(I use Pendrys Top Hat, the best single spice in my kitchen.
Not spicy hot, it's smoky, adjust amount based on the heat
of the chili powder you use.)
1/3 cup of cumin in 2 dumps
2 heaping tablespoons oregano
Salt & Pepper It can take a lot
Taste taste taste
Add your favorite hot sauce to taste I prefer chipotle

Brown chicken breasts grill if possible set aside to shred.
Brown beef cook hard get color set aside
add water to pot sweat onions
Add back shredded chicken and beef plus all remaining
above ingredients saving 1/2 dumps for when beans are
added cook for two hours
Taste taste taste

1/2 hour before serving add:
2 cans black beans
1 can kidney beans
1 can pinto beans
1/3 cup masa
and 2 remaining spice dumps
You can add more beans it will take it.

Serve straight, with cheese and onions, or over small pasta.
People will beg you for more.

I Scream you scream...

I have been on a crazy ice cream making kick using 

1 cup heavy cream
2 cups half n half
1 cup sugar
1 Vanilla bean

Has anyone tried to lower butterfat contents to see how low to go with out making it crappy.
